Herbal compound butters are a quick and easy way to preserve the freshness of the season in a way that is useful and delicious.
In this video I am making wild leek compound butter but you can use this technique with ANY herbs you want to preserve. For the video specifically on wild leek compound butter: https://www.youtube.com/watch?v=WVjUIMnKD2c&t=491s
*For more pungent herbs like garlic I would start with 3tbsp per 1/2 pound.
*For aromatic herbs like rosemary and thyme use 1/4 cup (fresh) per 1/2 pound.
*For wild leeks and chives you may want to add up to 1/3 of a cup.
PLEASE taste as you go! You can always add more herbs, but you can't take them away. If you are using unsalted butter you may want to add a pinch of salt.
